I have eaten healthy and exercised for most of a week. It really IS the exercise! I have come to adore three bean salad. OK. So there’s not really three beans in it. I’m still calling it three bean. I usually use black beans and garbanzos. I add red onion, green pepper, chunks of cucumber, lots of Nature’s Seasoning and Salad Supreme. Then after mixing all of that in a large bowl, I take some out into a single serving and add extras — hard boiled eggs, mushrooms and avocado [all those things that would get mushy if left in the big bowl.]
But, fair warning . . . keep some of this handy.
