2 and a half bean salad

Um, evidently a little too much three-bean salad, yesterday . . .

Yikes! And, I’m teaching today.

How do you spell Gas-X? [That may, or may not be redundant.]

Well, all I can say is I love this salad!

1 can black beans, rinsed
1 can garbanza beans, rinsed
2 cups cooked brown rice
1 cucumber, diced
1/2 red pepper, diced
2 stalks celery, diced
2 stems green onion, chopped fine [or red onion is excellent, too]
2 T Italian dressing
Salad Supreme and Natures

Whatever else you have in the fridge that’s crunchy! I also love a dollop of cottage cheese on top!

I must have eaten at least four cups of this yesterday . . . two for lunch, two for dinner.

And, today I’m well, a little [um, gassy.] P.a.r.d.o.n.

[OK! I know it’s really only two bean salad.] [I could hear you screaming at me.] Well, not really screaming . . .
